Kimchi Risotto with Carrot, Parmesan & Edible Flowers

Our passion for tableware originated from our love of food, cooking, and togetherness. This autumn and winter, we'll take you through various dishes that can form your (vegetarian) Christmas dinner. For each dish, we'll share which tableware we chose and why we think it's a good match. Today, a delicious appetizer: Kimchi risotto with caramelized carrots, grated parmesan, and edible flowers.

The ingredients

  • Risotto rice
  • Kimchi
  • (Small) colored carrots
  • Parmesan
  • Edible flowers
  • Honey
  • South Korean gochujang
  • Bouillon cube
  • Olive oil

Handy to have: A grater and a round cookie cutter

Preparation

Sauté the onion & garlic in a pan with olive oil. Add the risotto rice. Bring the bouillon cube and kimchi liquid to a boil in a separate pan. Then slowly add this liquid to the risotto rice in the first pan until it's cooked. If desired, add chopped kimchi to the risotto for extra flavor. We also grated some parmesan cheese into it.

Take another frying pan and pour in a little olive oil. Place the carrots in the pan and cook them on low heat. Take a bowl and mix the South Korean gochujang with honey. Glaze the carrots in the pan with this mixture, cover the pan with a lid, and let it infuse for a few more minutes.

Serving - On a deep pasta plate

You're almost ready to eat! We served the risotto on the following plate:

  • Pasta Plate - We chose the dark blue Midnight Blue pasta plate because we think it suits the dark autumn and winter days very well. Additionally, the colors of the dish stand out beautifully against this plate.

Take your round cookie cutter and place it on the plate. Fill the inside with the amount you want to serve your guests. Then slowly remove the ring. Grate the parmesan over the entire plate. Place the caramelized carrots on the risotto and add the edible flowers. Ready to spoil your guests with this delicious dish!
